Guillaume Brahimi, has opened his new restaurant, much to the delight of all his fans from his days at Bennelong at the Sydney Opera House, where he reigned for 12 years. Guillaume took over the very popular Darcy’s at Paddington, and after eight months of renovations, has finally opened the doors to diners.
The 90-seat restaurant features a blue and grey colour scheme, Hermes wallpaper and fabrics by Pierre Frey, with the menu offering a mix of classic Brahimi dishes as well as some fresh culinary delights, including Marron with pork cheek and tooth fish with salsify, jamon and jerusalem artichoke. For dessert, who could go past the signature chocolate soufflé with sour cherry and vanilla bean ice cream?
Diners can choose from a full degustation menu or a la carte.
