Chef Virgilio Martinez, who runs Central, Lima’s top restaurant, is scheduled to open an additional eatery in Cusco, while his wife and Head Chef, Pia León will be opening her own establishment, set to focus on seafood and coastal produce.
Built up from a humble’s butcher’s shop, Osso Carniceria y Salumeria in Lima is famous for its decadent, meaty dishes. Following on to its success, Chef Garibaldi is not only planning a second branch in upmarket San Isidro but is collaborating with fellow chef Ciro Watanabe to open Japanese-inspired Dondo, which will serve grilled wagyu beef dishes. andBeyond’s Flavours of Peru itinerary offers the opportunity to visit the top restaurants of Lima and Cusco, as well as to experience more regional menus and flavours.
